Trapper’s Sushi opens this month on Cole Street

Jackson’s is no more.

Japanese-inspired, Washington-based sushi joint Trapper’s Sushi is opening its newest branch at the heart of Enumclaw this month. Located at 1537 Cole Street at what was formerly Jackson’s restaurant, the Trapper’s location will celebrate a soft opening on Jan. 21 and 22 and its grand opening on Jan. 23. The location is currently hiring, too.

The move-in from Trapper’s highlights just how much Cole Street has changed over the last two years.

At the intersection of Cole and Griffin — the heart of downtown Enumclaw — three of the four corner buildings have taken on new businesses. On the north side is Redemption Press, which expanded into the new space from its Griffin Avenue spot. On the east side is the Cole Street Game Vault, a game shop that opened its doors December 2021.

Other businesses that opened or expanded on Cole Street last year include the Griffin Brewing Pilot House and Pursuit Distillery’s tasting room, although Urban Junktion moved to Buckley.
